I’ve always been able to “air print” from Notes on my ipad, but tried this evening, and none of the “symbols” now showing (above the note) work for printing...? What’s the deal? Usually it’s a square with an upward pointing arrow, but that isn’t present. I tried clicking on all the symbols showing, but none were for printing.

ThePrint option in Notes for iPadOS14 is now a little more convoluted to reach...
From the Notes sidebar, locate the Note that you wish to print from the list. Touch and hold (i.e., long-touch) the Note that you wish to print; an Action Menu will appear. From the available options, tap Send & Copy - and from there select Print from the Share Sheet.
Alternatively, from the Note itself, tap the ellipsis icon (three dots), then tap Send & Copy - and then Print.

Thank you! Mine says “send a copy”, not “send & copy”, which I interpreted differently, but that did work!
Whilst working from memory, the “&” versus “a” was entirely a mis-type on my part - otherwise the guidance, as you discovered, was correct.
I’m pleased to learn that the problem is now sorted.
