Others have reported the absence of the paperclip attachment icon. I have this issue but also I find I cannot 'Flag' emails. Existing flags are not being displayed either. The sidebar shows the number that are flagged however!

True. And, by the way, the same issue means that you can no longer swipe the trackpad to toggle read/unread for individual emails in Column Layout either. They need to fix that in the next update too!
This looks like a Big Sur design issue - these features are no longer available in Column Layout. If you switch layouts in Mail, you can see the flag and paperclip icons on the far right of the preview window.
I'm not sure why Apple can't make those available as "show" options in the View menu for Column Layout (as it does for message size, etc.). Seems like an easy and needed fix for the next update!
Brian - I just figured it out: Control-click anywhere in the headers bar directly above your email. It will bring up a drop-down menu of options for columns in Column Layout, including flags, attachments, etc. I don't know why they don't include that in the help but it's there.
Thanks. Just another example of the lessening reasons to stick with Apple. They are feeding off the lack of an alternative.
