Same problem here. I spent 5 hours on chat and the phone with support and finally had to reinstall iOS from iTunes. Then the watch app worked fine but when I brought back apps and data it crashed again. So I spent the entire day getting my iPhone Xs set up like it was before (the hard way) but at least the watch app and the watch 6 is working again.
