how do I back up my old iPhone 5s with the screen blacked out?

If you have previously synced the phone with iTunes on your computer (and thus established a “trust” relationship) you should be able to plug it in and click on its icon in iTunes, where you can then click Back Up.
If you haven’t done that there is no way to back it up now.
