My iPhone 11 iOS 14.0.1 backup has been stuck at 23 minutes remaining for about an hour. Any recommendations? Last backup was in June and it is fairly large. Thanks in advance.

If it is the first time backup and the backup data is large then it may take a very long time. Subsequent backups if done daily will hardly take any time.
Leave your iPhone connected to WiFi and power source over night.
