How can I use my iMac 27” (late 2015) OS Mojave as a display from a new macbook pro? Workaround?

Sorry, not by using Apple's now-deprecated Target Display Mode. Both of your devices are too new. Only a small sub-set of iMacs made between Late 2009 and Mid 2014 can function as external displays, and 2019 was the last model year that Macs could access an older iMac as a display.

You can try network screen sharing but it can be slow and not to the resolutions you may need.
