How do I increase the time my phone (SE) remains unlocked? I did it once but now I've forgotten how.

No, I can only change it to 5 minutes. I had it at 30 minutes last time.
I'm pretty sure I had an hour once. I have the new SE.
I don't recall 30 minutes ever having been an option. Even this article "How to change Auto-Lock on your iPhone and iPad," published in 2016 lists:
