If I add more storage to my iCloud and share with my family, will they be able to see my messages and photos?

Not unless you choose to share content with them. With iCloud family sharing, everybody’s space is assigned to their AppleID and is only accessible to them using their AppleID.

This of course assumes you are using Family Sharing and not sharing one AppleID with all.
