I once knew how to download music from itunes (on my MacBook) to my iPhone. Since it's changed to "Music", I don't know the trick. I do not use iCloud, nor do I want to. I'd just like instruction how to get my music from the laptop to my phone.

You can still sync your phone by connecting directly to the computer via USB. When connected, the phone will pop up in Finder rather than iTunes, but otherwise the process is the same. See details in here:
