How to safely uninstall Catalina, reinstall Mojave

I need a step-by-step of how to safely uninstall Catalina and go back to the previous OS, Mojave.

I lost a lot of apps, including Aperture, a much superior app than Photos.

I want to be able to use the apps I choose.

You can download Mojave thru the app store, then create a bootable installer; reboot while holding CMD-R, Go click on Disk Utility, erase your disk, reboot into your Mojave installer, and install.

Or restore from your backup.
