Lower Case
In 'Mail', the first letter of each line of text is formatted to Upper case.
How can I change this to automatically default to lower case?

Mail is likely taking its hint from System Preferences : Keyboard : Text -> Capitalize words automatically. If this is selected, consider unchecking it.
