Apple Watch Series 1 iOS 4.3.2 - want to update to iOS 6 - I have a iPhone 11 Pro Max - update reads 4.3.2 software is up to date. I've followed the Apple instructions using my phone but the Watch app will not update. Anyone with insight?

That's a 1st generation, Series 0 watch.
It's a bit confusing in the first couple of generations.

the model is A1553 which indicated this is a Series 1 NOT a 0 according to Apple's website
You will have to have a newer iPhone to update to watchOS 6, it requires a phone running iOS 13.x and your iPhone 6 does not have enough RAM to run that.
I don't have an iPhone 6, I have the newest iPhone - it's an iPhone 11 Pro Max with iOS 13.6. I'm trying to update my Apple Watch Series 1 from 4.3.2 to 6.0
And you are absolutely sure about your model? What is the other model in Settings?
A1553 on Apples website says that model is a series 1
