How do you stop Photos from identifying people, thus slowing down Photos coming up?

You can't. You can keep the iMac powered on with Photos closed when not being used to let it continue its work at night and when you're not using the iMac.
Also tell Apple what missing features you'd like restored or new features added in Photos via Feedback - Photos - Apple
