Can't upgrade to Mojave O/S

iMac (mid 2011) running sierra and would like to upgrade to Mojave or Catalina but Apple won't let me.

What can I do other than buy a new iMac

Nothing. Mojave and Catalina require a 2012 Mac or newer.
