The GPS only version will work anywhere your paired iPhone works.
There warranty is regional, so you may not be able to use the warranty in India.
DO NOT get a cellular model in the U.S. and take it outside of North America, as the North American cellular model only works in Canada, U.S. Mexico and Puerto Rico.
DO NOT buy an Apple Watch in a country that has not approved ECG, such as during a layover in Dubai (many travelers going back to India have found out the hard way that ECG does not work, because it was sold in Dubai). ECG is approved in the U.S. and India so a U.S. GPS only Apple Watch Series 5 ECG will work in India.
