e-mail signatures
I set up signatures in 'mail preferences' but when I close mail they disappear. When I start up mail, the signatures are no longer in preferences.... what's up with that?

Do you happen to have an iPhone also? The reason I'm asking is that the signatures are actually saved to your iCloud settings. If you had an iPhone, you could trying creating the signature you want in there, and seeing if it saves properly. Then theoretically it should populate back in the macOS mail program.
iPhone > Settings > Mail, scroll all the way down to Signatures
I'm curious to see what happens.
