I am using iTunes and Mohave OS. When I upgrade to Catalina, iTunes will change to Apple Music. I have many CDs I still need to download into iTunes that are NOT available in Apple music subscription (they are old classical performances).
I'm afraid to upgrade iTunes since I may lose the ability to download all my CDs. Is the a way around this?

I strongly suggest that you rip the remaining CDs and make backups of the resulting audio files. CD drives are getting less and less common.
Yes you can still import from CD or any other source. Music app is really iTunes with the podcasts and movies chopped off and made into their own apps.
