The GPS only model can do Everything this Cellular model can do as long as your iPhone is nearby.
The cellular model shares the iPhone’s phone number. This requires the iPhone cellular carrier to support the Apple Watch. For this service the iPhone cellular carrier charges a monthly fee. In the U.S. $10 is added to your iPhone monthly cellular bill.
If you get a cellular Apple Watch, you are not required to activate the cellular radio. In that case it will act as if it was a GPS only model.
