I have a new iPhone and have migrated all my info from my old one. I would like to give my old iPhone 6 to my mother (isolated) with a new sim.
is it safe to delete my information stored on the phone (photos, apps) or will they also be deleted from my current phone when I get a new sim for the old one and turn wifi back on?

Do not manually delete them, while the iPhone is still logged in to your Apple ID for iCloud as that would sync any changes to the new iPhone and delete them from there as well.
Follow the steps provided above by sberman, to wipe it completely, without affecting your other devices.
