I just wiped out my starting disk, and I want to go back to OS version I was recently using. The problem is when I press Command + R and get in recovery mode, it doesn't take me to the last OS I had which was high sierra, but Mac os X Lion and my computer don't allow me to install that one. What keys I have to press so I can install the latest OS I had??

Your Mac, from my experience, will only install the OS which came with it when it was shipped once you delete the current installed version. Having had the issue before I had to install OS over OS to get the version I required.
