iOS upgrade bricks connecting to desktop (and thanks for the warning, apple)

I just upgraded my phone to iOS 13.4 and now I get an error message saying I can't connect to my desktop to do backups (I run Sierra/OS10.12.6) without an upgrade. I can't upgrade to Catalina as it bricks sound engineering software vital to my work. Is it possible to upgrade just a little bit, or to roll back the iOS upgrade on my phone? I feel really hijacked here, not nice.

Click Install. Back in the day certain updates to iOS would require a new version of iTunes. Now that Apple have effectively frozen iTunes at 12.8.3 for older versions of macOS this is done with an update that patches the iTunes software package rather than a new release. Manually checking for updates in the app store or reinstalling iTunes won't help. You need to install this particular software update when prompted, just as Apple's support document says.
