Bluetooth
i have a older generation Apple TV. When I go to pair my AirPods or any product to it it never pops up! And is there any other way to get the sound to go through the tv other that the optic level output?

Only Apple TV HD and 4K models will pair with Bluetooth headphones. If you have a generation 3 it will pair with Bluetooth keyboards but NOT headsets.
