When I open a pages document it does not have a tool bar for changing font size, color, bold, italics, etc. This was always there until yesterday. I am using a Mac mini and it receives automatic updates so it should be completely up to date.

Apple has not shipped a version of Pages since Oct 2013 (Pages v5.0 thru v8.2.1) that has anything on the toolbar, or toolbar customization, that would allow you to control font attributes. The Pages '09 application did provide these toolbar font controls, and as a 32-bit application, no longer works on macOS Catalina (10.15).

Not available in the tool bar. Those controls are in the Format Panel on the right. If you don't see the Format Panel, click on the Format "paintbrush".

Take a look in the View menu. You should find Tool bar related options near the bottom.

Had tried that but it did not work. Eventually just shut the computer down and it re-appeared after re-start
The tool bar allowing changes in font such as bold and italic is missing from pages documents
