Stored music

I have music from old CD’s stored on my iPad transferred from my MacBook using iTunes. Will I be able to access this music using Apple Music?

If the only copy is on your iPad, no.

If you still have the music on your MacBook, yes. Audio files ripped from CDs will play in Music just as they played in iTunes.
