If you want to downgrade your OS Catalina, the easiest way would be from your Time Machine backup:

Restore your Mac from a backup - Apple Support

If you don't have a TM backup or a clone, then you'll need to wipe to the disk and re-install. That can be arduous.

If you want to do this because of issues in Catalina, let us know what the problem is and we may be able to help.
