Disconnect the computer from the Internet until you are able to attend the computer. You can make whatever changes are needed before reconnecting the Ethernet cable or turning on Wi-Fi.

You are not forced to Catalina. If you don't want to install it, then don't. See Turn off/Turn on Automatic Software Update on MacOS Mojave ...

I got a message saying upgrade will happen overnight. I don't have auto update checked. This appears to be a statement and not an option.
