how do I delete a photo album on my iPhone?

In the Photo App, Tap Folders, then Tap See All. Then tap Edit and you'll see a red circle with - in it for all folders. Tap the - and you'll be able to delete the album, but the photos themselves will remain in your photo library. If you don't want the photos, you'll need to delete them separately.
