What happens when I cancel my storage plan? Do I lose all the stuff I saved in my icloud?

Well, you have a free 5GB of storage, so not all is lost. The cancellation goes into effect at the start of the next billing cycle. Once it is cancelled you will lose most of what you saved. That's how it works.
