How do I save a photo from a text message on my MacOS laptop?

I double-click them if they are in the Message app. That gives the option to open Preview where you have "Save..." and "Save As..." options with no loss of quality as a screenshot would cause.

you could try taking a screen shot. Command+shift+4 should let you take a directed screen shot
