What files on Mac are not placed in iCloud

I am trying to keep some files only on my Mac and not have them placed in Cloud....that is personal files on Mac that I do not want to have available on iPad I use for work in the field. As iCloud seems to copy all files on desktop and documents, where should I put a folder that I do not want on iCloud? Downloads?

iCloud Drive Files question All my files in iCloud Drive . I can see it with my Finder's Mac as a Cloud symbol appear. In case of creating a new Folder / File , It seems that it's also in iCloud BUT at the Pop Up Menu I see REMOVE DOWNLOAD option. Does it mean that it's also in my Mac ? Prevent specific files from being store in iCloud Is there a way to prevent file X from being stored in iCloud? It's fine to be backed up there, but without internet, I cannot access it. Other responses to this question in "Community" directed askers to instructions for turning syncing for the entire Desktop or Documents folders on or off. This is not a solution to the problem, as I want my Documents in the cloud, I just don't want a particular folder residing only in the cloud.

Where on my Mac can I "hide" some documents that I do not want to sync to iCloud Drive. I have some files on my Mac that I do NOT want to go up on iCloud Drive. Where can I "hide" these files so that iCloud does not "see" them when it syncs the rest of my "Desktop and Documents?" One promising location is the "Downloads" folder because iCloud ignores it. Any other ideas? (I regularly clean out my "Downloads" folder so I do not want to accidentally delete something precious.)

Anywhere but the Desktop, Documents and iCloud Drive folders.

Thanks. Very clear and simple. Another question, can I disable desktop and documents syncing and only have it copy iCloud drive folders?
