How to edit audiobooks transferred from iTunes to Books

The new version 2.0 of Books in Catalina (10.15) pulled all my audiobooks from iTunes, but doesn't provide any way to edit the names (or order) of tracks.

How do I edit the names and order of tracks in an audiobook in the Books app on MacOS?

iMac 21.5" 4K, macOS 10.15
