I'm on the iPhone Upgrade Program and pre-ordered an iPhone 11 Pro Max for Apple Store pick up. Is it mandatory to turn in your old iPhone when picking up the new iPhone, or can I mail it in a couple days later?

If you are doing in-store pickup, I believe you will be asked to turn over the phone at the time you get your new phone.
I could be wrong on that, so for a definitive answer, you should ask Apple directly to be sure.
