How do I delete old purchased apps that are unwanted

From iPhone?
Tap the app's icon and hold but do not press into the screen. Once apps start to wiggle tap the "X" button on the apps you want to remove.
If you are talking about your purchase history, you can't remove apps from there but you can hide them. They will still remain associated with your Apple ID, so even they are payed, you can download them back for free if needed.
