how do i stop numbers auto changing 3 P to 3pm?
I just want a cell to contain 3 P and nothing else!

Format the cell as Text before entering the value, or precede the entry with an apostrophe/single quote.
Numbers recognizes that apostrophe as a signal that what follows is text, and prevents it from being formatted as a date and time value (or duration, or number).
Choose Text (highlighted) from the Data Format pop-up menu.
Below:
Cell B1 has its data format set to Text.
Cell B3 has its data format left at the default Automatic, but had its content entered as shown in B4.
