Hi everyone!
Why I can only see two kind of Apple Music's subscriptions? Student or Family? I just want an individual subscription.

Try restarting your device. You should see all options.
However, if you have an Apple Music Student subscription, and you no longer qualify as student, then the subscription type will be changed automatically to Individual.
