When I back-up my documents, it selects all file folders and I am running out of space. I want to exclude specific drives or file folders from my iCloud back-up - i don't want to delete documents on that drive - i want to exclude an entire file folder.

There are no options to exclude folders from the sync to iCloud. If they are in the iCloud Drive folder they are synced. The only option would be to move them to a location not in iCloud Drive.
