Depending on which model Apple Watch you have you can either play music or podcasts stored on the Apple Watch, or if you have a cellular model and you have added your Apple Watch to your iPhone cellular plan, stream Apple Music

If you are having difficulty pairing your Bluetooth headphones to your Apple Watch, then I can confirm that I've paired Sony, Jabra, Insigna and Apple AirPods Bluetooth headphones to my Apple Watch. Except for the AirPods, the hard part was finding the instructions to put the headphones into "Discovery" mode. Thank goodness, most instructions can be found on-line via a Google search.
