You can't disable it. Just don't use it. Note that Airplay is used for other things than an Apple TV.

What do you mean "the signal is in my screen"? Can you post a screenshot? I watch videos on my phone all the time and never see anything about Airplay unless I intentionally invoke it.
If it's gone, don't worry about it.
Airplay is used for things like BlueTooth speakers.
