how to restore my backup from old iPhone to a new one with smaller space

My old phone backup is about 19 GB while my new iPhone has only 16 GB. How can I just restore some of my files?

iMac 27", macOS 10.14

You can't. The restore is all or nothing.

If you still have the old phone, delete stuff to get the size of the backup down, back it up again, then restore that.
