How to make sure my iPhone 12 automatically connects to CarPlay upon getting into my vehicle?

It's a 2017 Grand Caravan. And no, it does not have CarPlay. It's the original radio and it is dead. So, I was thinking of buying an aftermarket one. So, yes I'm sure it will have CarPlay. Do you have any suggestions?

Then, as you know, a number of manufacturers offer aftermarket audio units that support Apple CarPlay. Most of these from Kenwood, Pioneer, JVC, etc. require that you connect your iPhone to them via a wired USB connection for full functionality. Some also offer limited CarPlay features by connecting your iPhone by wireless (Bluetooth).
Regardless of how the phone is connected, most (if not all) CarPlay features should be available.

Would an aftermarket CarPlay radio that connect my iPhone via Bluetooth interference with my iPhone while using it in the house? Right now, my Bluetooth speaker needs to be MANUALLY turned off to avoid taking over while on a speakerphone call.
I have no idea. You will need to ask that question directly to the manufacturer of the CarPlay radio you are interested in getting. Chances are that if you use your iPhone with competing Bluetooth devices nearby, you will have potential connectivity issues.
