Reason why DOCUMENT not moved

Just wonder why when I move a document from my desktop to a USB drive that it seems to move a COPY vice the original document resulting in having to trash the original document?

This is precipitated by inability to access ALL my external (usually USB) drives in the SAVE AS option. See two attachments

Also note that under Desktop, first image, that under the "recent" it sometimes shows FOLDERS on the USB drives IF I had accessed them recently. This still does not allow me to access other folders on that same drive.

This may be normal.

The Desktop (Desktop folder) lives on the startup drive. If you simply drag a file from the Desktop to an external drive or a different volume, that file is simply copied to the destination but not deleted from the source. Therefore a copy. If dragged to another folder on the same drive or volume, the file is moved from the source folder to the destination folder

However, if you press and hold the Command key (⌘) when dragging a file to another drive or volume, a copy is made at the destination and the original is deleted from the source. Therefore a file is moved, in simple terms.

You absolutely can.

The standard Save/Save As... dialog has two modes - a compressed mode that offers quick access to common/recent locations such as your Documents folder, Desktop, etc., and an extended mode that gives you (almost) unfettered access to the file system to save wherever you like.

Compressed:

Extended:

You toggle between them using the (too subtle?) toggle next to the Location:

In Extended mode you can navigate to any directory on disk (that you have permission to view).

In addition, in both modes, there's a shortcut option where you can type in any path you want. Just press the / key and it will bring up the Go To: dialog. To access an external disk, just type /Volumes and you'll see a list of attached volumes. You can continue to type or click on the volume you want to navigate the hierarchy.
