I have a 2020 MacBook Air laptop (Sequoia 15.5) that was given to me by my daughter. I need to switch it from her Apple account to mine. I did this easily with an older laptop, but am having more difficulty with this one. In the older one I could sign out of her account and sign in to mine. I don't see that option with this one. Any suggestions?

Yes, on newer models with newer operating systems, security is tighter. What you may be encountering is Activation Lock or at least the Find My (Set up Find My on Mac - Apple Support)setting. Have your daughter do the things in this support article What to do before you sell, give away, trade in, or recycle your Mac - Apple Support or at least the things that require her to enter her account information to be able to reset. She can do these remotely if necessary.
