Can I restore deleted tags or change their color in Pages?
Can I add a tag back in pages if I deleted it? Can I change the color of tags?

You have a choice of only the tag colors that Apple provides with the operating system. The Finder Settings gives you the freedom to create new tag names based on existing tag colors. And yes, you can tag a Pages document from either its document title (single-click), a Save/Save As panel, or from the Finder.
