Pages: Can text in a catalog use multiple fonts?
I'm using pages to make a catalog, but can the text in the catalog only unify one font?

I'm not sure I understand the question. Your subject implies you want multiple fonts, but your message implies you want it the same?
In general, Pages doesn't care. Every character on the page can be a different font if you want, or they can all be the same. It's entirely up to you.
Pages does have a concept of Styles where you mark specific content as being a particular style, such as Header, Body Text, List, etc., which makes it easier to make sweeping changes to the layout (want all your Body Text to be larger (or smaller)?, just change the Style and everything that uses that Style will update with the changes), but you're not obligated to use them.
Maybe if you can explain more about what it is you're trying to do, a more direct answer would be possible.

Actually, I am a Chinese user. There are two languages in my thesis, so I need to use two fonts. But when I use the catalog function, it only can use one font in it. This isn’t fitting for my request.

To write in two languages, you normally switch keyboards/input sources. Fonts take care of themselves, and many fonts cover multiple languages. What exactly are the languages you need, and what happens when you try to type in both of them? Post a screen shot to illustrate the problem is possible.
