Just to make sure you have your terminology correct, there is no such thing as adding money to Apple Pay because Apple Pay is not an account that holds any money. You may be referring to Apple Cash. The iTunes you refer to is your Apple Account, and that is the one that holds money for purchases to be made in the App Store, Music, Books, or other Apple content. And finally the Apple Card is the credit card managed by Goldman Sachs, and you would not see an option there to cancel the transaction. Each of those are seen as cards in your Wallet, so it is slightly confusing.
