To upgrade or not to upgrade to iPadOS 26 in the current version? Should I wait?
Is it good and safe to upgrade to iPadOS 26 now? Stable? Or should I wait?

iPadOS 26.1 is stable - with no serious issues reported.
Whether or not you choose to stay with iPadOS 18.7.x (at the time of writing, iPadOS 18.7.2 is current), or upgrade to iPadOS 26.1, is largely personal choice at this time. Clearly, access to some new features and capabilities require upgrade to this new major version.
Soon, at some point in the foreseeable future, security updates for devices for devices that support iPadOS 26.x will no longer be available if you remain with iPadOS 18.x.
