Printer Issues : works for a time then won't print

I have an intermittent issues , HP Envy 7858 printer setup to print with USB cable to MACOS desktop running Ventura 13.7.8

Printer will work for a time and then for some random reason just won't print unless I REBOOT the MAC desktop. AIRPRINT won't work either... It like the printers all got high-jacked and refuse to print... I get an error in the printer queue that its unable to open the document.

Checked drivers for this printer :

Have deleted printer and redefined it... It eventually stops working unless I reboot.

The printer queue keeps asking to upgrade the printer , I have done this in the past but the PRINT DRIVER reverts to v3.0 from v3.9 .... that is strange seems odd to go back. It does not seem to matter whether I have a printer with v3.0 or v3.9, the issues pops its up and I have to reboot. Any ideas ? On what to do? Really ready to replace the printer but I'm not so sure its the PRINTER or is it my MAC os.
