iPhone/iPad backup folder empty when viewing on Mac, devices say they are backed up

I am trying to restore some Notability files from a backup on my iPad Pro, which I accidentally deleted. In the iPad settings under iCloud>iPad name, the device says it was backed up to iCloud lastnight. However, when I plug the iPad into my Macbook via USB and look in Finder, there are no backups shown.

I have tried viewing the backup folder directly via Finder>Go>Go to folder, this file path: ~/Library/Application Support/MobileSync/Backup/

The folder is empty, despite the iPad saying it was backed up. I also tested this with my iPhone 17 Pro with the same result. Could this be an issue with the MacBook? I have attached images below of the Finder iPad window and the empty backup folder.

If you are backing up to iCloud, you won’t find the backups on your Mac as they are in iCloud. This article could help you restore your data: Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.
