Have an issue with iPhone 15 pro max, tried to restore from backup but did not work so it set it up as a new phone, I forgot to turn off backup. I went back into restore from original backup a few days later, and it only gave me the option of two updates, which were the new phone. Can I get hold of the older backups or have I lost everything?

The older backup is gone, since it was overwritten with the new update.
If you were syncing data to the cloud or email sign back into the account and enable said data.
