Why does Apple CarPlay disconnect phone calls on any car?

I travel for work and rent a lot of different cars. No matter what car I’m in the Apple CarPlay takes calls, but part way through the call it disconnects. Sometimes if you way a minute out two it will reconnect, but sometimes that never happens. It used to work fine last year, then it started doing this after one of the IOS updates. At first I thought it was an issue with my car (2024 Subaru Outback), but as I said it happens in any car I drive. I’ve tried several of the recommended fixes out there on both my car and my phone with no luck. This is truly frustrating. There was clearly a change that happened in an IOS update that still had not been fixed. Why can’t the developers figure this out?
